The 10-12' purple-skinned roots have vivid orange centers, which make quite an eye sensation when sliced on a relish tray. Purple color will fade when cooked. Use them like any carrots, add to soups and stews, or steam with a butter and seasonings. Roots should be be harvested in the fall. 70-75 days to maturity.
