The Picholine is a rare import. Because of its small crop yield, this olive is usually sold domestically or sold for a very high price. Picholine Olive Trees are of intermediate growth, bearing fruit in their fourth year. It's crops are small and they vary from year to year in size. This tree bears little fruit. In fact, the French Picholine averages between 400-600 metric tons, which is why they are a rare import in the US. Easily identifiable, the Picholine has an elongated body with an asymmetric shape: very much like an almond. There is a pointed apex on one end and a nipple on the other. Some say they resemble a "torpedo." The color of a Picholine ranges from straw-colored to a grassy green. As with most lye treated olives, this olive has crisp skin and a firm flesh, yielding to the bite. The sizes of Picholines can range from 220-340/kg. They have a briny, mild flavor with floral, fruity notes.
