Rice, as with all cereals continues to mature after the harvest, and reaches its peak one year later. The Carnaroli Gran Riserva is aged one year in aerated silos before being milled. This improves the resistance of the rice during cooking, and its ability to absorb sauces. An ancient Indian tradition has it that on the birth of a child, it is presented with a bag of rice as a sign of prosperity. The rice is then cooked and eaten at the marriage ceremony years later. Another tribute to the tradition is the husking, which is carried out by stone milling, thus allowing a more gentle abrasion of the grain, and ensuring an improved cooking performance and reduced stickiness. The Carnaroli Gran Riserva was born in a farmhouse in the Po Valley, where the characteristics of the soil and microclimate are the most favourable to this type of rice. The rigorous selection of the seed and sowing, in optimum density, guaranteed a very high quality product. The harvest of the rice plant is only from the "heart of the rice field", where the sun exposure is better. The result is a superior quality rice, produced in limited quantities, and subject to a very strict selection, where only one grain in three is selected for the Gran Riserva. The resulting grain has a rich sweet aftertaste, is perfectly calibrated to allow an extremely even cooking, and brings together six generations of love and culture for rice.
