Our professional grade cookware is constructed with five layers of metal that include a pure aluminum 3004 alloy between two layers of aluminum - all sandwiched between induction friendly high-grade stainless steel. The aluminum layers transfer heat quickly and consistently through all areas of the pan for even cooking while requiring less energy to achieve desired temperatures. The Viking® Professional five-ply cookware is suitable for all cooking surfaces; gas, electric, halogen, ceramic and induction. This exclusive Multi-Ply construction includes a layer of magnetic stainless steel for induction cooking capability. The ergonomic stainless steel stay cool handle, a Viking Design exclusive, provides maximum comfort and secure handling. Constructed of investment-cast stainless steel that balances the pan with the wrist and forearm, making lifting a full pan easy. The stay-cool vent design which provides maximum comfort and secure handling. The open stock fry pans with the non stick coating features Whitford Eterna® PFOA free coating with superior release. Backed by a lifetime limited warranty, Viking cookware will help you produce restaurant quality results. Condition your non stick pans like you would cast iron. After cleaning, condition your cookware before using it for the first time. With a paper towel or soft cloth wipe the interior with 1 tsp. (5 ml) of vegetable oil. This should be done with the pan at room temperature. To maintain the longevity of your non-stick surface, repeat this process every 3 - 4 months or whenever food starts sticking to the pan. DO NOT USE AEROSOL COOKING SPRAYS: An invisible buildup will impair the non-stick release system causing food to stick to the pan.
