Chives are a perennial plant and tend to be quite hardy. Plant this herb in full sun or part shade in well-drained, fertile soil. You can start chives from seed outside, or transplant them into your garden. Give chives plenty of water until they are established. Chive plants can be divided if needed to reduce crowding problems. The plants will grow up to 12 inches high. Keep the garden area free of weeds, since chives don't do well with the competition. When you are ready to harvest the chives, cut leaves from the outside of the plant with scissors or a knife. You can use the chives fresh or dry them for later use.
