Heat one inch of vegetable oil in skillet or oil as required in deep fryer to 350 degrees F. 2. Wash fish thoroughly in cold water, drain off excess moisture. Cut fish into filets or long 1/2â€'inch wide strips. Add salt and pepper to season. 3. Pour Zatarain's Wonderful Fishâ€'Fri onto plate or into plastic bag. Roll or shake moist seafood in mix until evenly coated. 4. Fry seafood (a few pieces at a time) in hot oil until light golden brown, remove and drain on absorbent paper. Serve hot.
